Grape varieties: Palomino Fino, Pedro Ximenez Paxarete Viejo San Jos is a port like sweet wine that, thanks to over 80 years of aging without refilling the barrels, acquires a very high viscosity and is unique due to its aromas of cocoa and dried fruit. In this case, the Paxarete comes from a barrel at Bodega de Garcia Monge and was made from the Palomino Fino and Pedro Ximnez grape varieties.
